Avocado Goji Pudding

Vega, Gluten-Free, Raw 
Course: Breakfast, Dessert, Snack
Servings: 2

Ingredients

  • 1 ripe avocado pitted
  • 2 Medjool dates pitted
  • 1 teaspoon chia seeds
  • 1/2 cup almond milk
  • 1/3 cup goji berries soaked for 10 min, washed and drained

Topping:

Instructions

  • Place all the ingredients in a hight speed blender (or food processor). Blend until it reaches a creamy, pudding consistency.
  • Divide among 2 small bowls or glasses and refrigerate at least 30 minutes.
  • Top with sliced almonds and extra goji berries and serve.
